Stevia is 200–400x sweeter than sugar depending on the form. Always check the packaging — ratios vary significantly between brands.
- Pure stevia powder: most concentrated — ¼ tsp ≈ 1 cup sugar.
- Packets (Truvia, etc.): pre-measured for convenience — 1 packet ≈ 2 tsp sugar.
- Baking blends: use half the amount of sugar called for.
- Liquid: best for beverages — ~3 drops per teaspoon of sugar.
⚠️ Stevia doesn't caramelize or provide bulk. In baking, replace no more than half the sugar with stevia, and add a bulking agent (applesauce, banana, yogurt) for texture.

Frequently Asked Questions
Why do baked goods taste different with stevia?
Sugar provides bulk, moisture, and caramelization — stevia only provides sweetness. Cakes and cookies may be drier or have different texture. Use a baking blend for best results.
Can I replace all sugar with stevia in a recipe?
In beverages and sauces, yes. In baking, it's better to replace no more than 50% of the sugar to maintain texture.
Does cooking destroy stevia?
No — stevia is heat-stable and maintains sweetness when baked or cooked, unlike some other sugar substitutes.
